Sometimes, as I sit in our little dining area and watch the
neighbors walk by with strollers, or children run around in their front yards,
I can’t help but feel a sense of gratitude for this lucky life that I lead. With
the cool mornings and evenings, it’s finally starting to feel like change is in
the air, and I find myself looking forward to the new season and any alterations
that might come with it.
I love weekends, especially since this is the time we get to
stay home, drink tea and make our own breakfast. As you know, I really do love
cooking, and these times enhance that feeling all the more.
Today we made Frittata Muffins. I lightly followed this recipe, but most of the time I find myself just throwing in what I already have stocked in the fridge. I used tomatoes, onions, parmesan cheese, black pepper, salt and garlic. Delicious!
After baking for 20-25 minutes
