I've been loving the Kind Bars as a go-to snack, but that habit is getting kind of expensive, so I decided to try and copy my favorite, the dark chocolate and mixed nut.
I started off with this healthy fudge recipe from A Cup of Jo. This is my go-to recipe when I'm craving chocolate (I use crunchy almond butter). I doubled the ingredients and lay a piece of wax paper down on a cookie sheet. I then spread the "chocolate" evenly in the pan.
I never really use measurements, so when making this, just use the ingredients based on your taste buds. These are just approximations:
- 3 c. Whole Oats
- 3/4 c. Cashews
- 3/4 c. Almonds
- 1/3 c. Coconut or Date Sugar
- 3/4 c. Coconut Oil
- 1 tsp. Cinnamon
- 1 tsp. Salt
- 1 tbl. Vanilla
- 2 tbl. freshly grated Orange Zest
Combine ingredients to taste and bake at 350 degrees until you can start smelling the oats roasting. Add a bit more coconut oil to moisten. The mixture should look shiny or glazed from the additional oil. Sprinkle over the chocolate and refrigerate for 30 minutes. Keep in fridge until gone (it won't take long :)
Like I said, these measurements are just estimates, as I tend to just throw things together, but the bars are so satisfying and help curb my sweet tooth.
