While we were gone, the garden seemed to have exploded and we were greeted with an abundance of good food. I was out every day last week collecting peaches from our Florida Prince. Every couple of days I went through the process of blanching and freezing the peaches for later spoils like smoothies, jams, cobblers, sorbets and so many other goodies. I love this part. Even if it is a bit more difficult with a toddler pulling on your leg.
Following my mother's expert advice, I boiled one pan of water and put ice in another. I left the peaches in boiling water for approximately 30-60 seconds and then transferred them to the cold water. When I removed the peaches from the cold pan, the skin just fell off. It's pretty amazing actually. I then sliced the peaches in half, put them in a gallon zip lock with a bit of lemon juice, made sure to remove any excessive air, and put the bag in the freezer for later. It's a super easy process and allows you to keep the peaches for months.
